Fedora, not Ubuntu is my choice of Linux as it is easy to put "/" (root) and swap on the SATA disk.
Also, leaving /boot on the SD card, kernel upgrades work seamlessly.
Remote in with MSTSC.exe or any RDP client, install the LXDE desktop and xrdp.
The Arduino GUI (for ARM armv7l) works well on this platform.

Honestly, this makes a great general purpose Linux box and, low low power.
